- Chicken — to buy600 g
- Olive oil — to buy2 tbsp
- Onion — to buy1
- Ginger — to buy15 g
- Tomato — to buy3
- Chili pepper — to buy1
- Peanut paste — to buy150 g
- Salt — to buy1 tsp
Preparation
Brown the chicken pieces in the oil for 5 minutes on all sides, in a large pot.
Add the sliced onion and ginger, cook for 3 minutes until fragrant.
Add the chopped tomato and chilli, cook for 8 minutes over medium heat.
Cover with water and simmer covered for 25 minutes, until the chicken is very tender.
Thin the peanut paste with a little hot stock until smooth, pour it into the soup while whisking to avoid lumps.
Simmer for another 10-15 minutes over low heat, stirring from time to time, until the soup is nicely creamy and coating.
Adjust the salt, serve piping hot with rice or semolina dumplings.
