- Spinach — to buy500 g
- Onion — to buy1
- Tomato — to buy2
- Olive oil — to buy2 tbsp
- Salt — to buy1 tsp
Preparation
Wash and finely shred the greens (spinach or collard greens), removing the thick ribs.
Heat the oil in a large pan and sauté the sliced onion for 5 minutes until translucent.
Add the diced tomato and let it simmer down for 5 minutes, mashing it lightly with a spoon.
Add the greens by the handful, stirring, they will shrink quickly in volume.
Season with salt and pepper, cover and simmer for 8-10 minutes, stirring occasionally, until the greens are tender.
Serve hot alongside ugali, it is the everyday dish in Kenya: quick, cheap and filling (the name means 'push the week').
