Ingredients
- Sliced beef — to buy500 g
- Onion — to buy1
- Bell pepper — to buy1
- Tomato — to buy2
- Garlic — to buy2 cloves
- Cumin — to buy1 tsp
- Chili pepper — to buy1/2
- Neutral oil — to buy2 tbsp
- Fresh cilantro — to buy1 bunch
- Salt — to buy1 pincée
- Pepper — to buy1 pincée
Preparation
Cut the beef into very small, even dice of about 1 cm: this is what defines suqaar, finely cut meat that cooks very quickly.
Cut the onion, bell pepper and tomatoes into small dice of the same size.
Heat the oil in a large pan or wok over high heat, add the diced beef and sear for 3-4 minutes, stirring constantly, until browned on all sides.
Add the onion and bell pepper, and sauté for 3-4 minutes over high heat.
Add the crushed garlic, cumin and sliced chili, and cook for 1 minute until fragrant.
Add the tomatoes and cook for another 4-5 minutes over high heat, stirring, until they soften slightly without releasing too much juice (suqaar should stay fairly dry).
Season with salt and pepper, sprinkle with chopped coriander and serve immediately, piping hot, with rice or canjeero.
