Cong you bing (thousand-layer scallion pancake)

- Flour — to buy400g
- Water — to buy220 ml (hot)
- Olive oil — to buy80 ml
- Salt — to buy1 tsp
- Spring onion — to buy6
Preparation
Gradually mix flour and hot water until a supple dough forms, knead 8 min until smooth.
Let the dough rest under a damp cloth 30 min to relax the gluten.
Roll the dough into a large, very thin rectangle, brush the whole surface with oil.
Generously sprinkle salt and sliced spring onion over the whole surface.
Roll the dough into a long tight log, then coil that log onto itself in a spiral (the technique that creates the thousand layers).
Gently flatten the spiral with a rolling pin into a 20cm disc without crushing the layers.
Pan-fry with a little oil, 4 min per side over medium heat, until golden and crisp.
Cut into wedges and serve immediately piping hot, the layers should pull apart easily.
